My Spaghetti Sauce

  1. In a large pot placed over a medium-high heat, add the oil followed by the onion, garlic, and a pinch of salt. Sweat the mix for 2-3 minutes.
  2. Add the Italian Spice and mix for another minute.
  3. Add the Tomato Paste, saute for 30 seconds.
  4. Deglaze the pan with the Vegetable Broth. - aka. Add it in ;)
  5. Add the zucchini, eggplant and carrots. Once simmering, turn the heat down to medium and allow the mix to cook for 2-3 minutes.
  6. Add the diced tomatoes, tomato sauce and Arabic Magic Spice Mix.
  7. Stir, and let the mix come to a simmmer before turning the heat lower, letting it cook, covered, for 10-15 minutes. Stir occasionally.
  8. Taste and add spices or liquid to your preference.
  9. Add the Vegan ground, and cook on low for a while (i.e. 10-15 minutes) until complete.
